  2. 2. Remove the stem and seeds from the pepper.
  3. 3. Halve the pepper lengthwise.
  4. 4. Dice the pepper flesh into very fine cubes.
  5. 5. Stir the cream cheese with the tomato paste in a bowl until smooth.
  6. 6. Season the cream cheese mixture with salt and pepper to taste.
  7. 7. Finely chop the rosemary needles.
  8. 8. Fold in the chopped rosemary needles and the diced peppers into the cream cheese mixture.
  9. 9. Dice the feta into small cubes.
  10. 10. Whisk the eggs in a separate bowl.
  11. 11. Season the whisked eggs with salt and pepper.
  12. 12. Fold the feta cubes into the egg mixture.
  13. 13. Heat the butter in a non-stick pan.
  14. 14. Pour half of the egg mixture into the hot pan.
  15. 15. Let the omelet set over low heat until firm.
  16. 16. Carefully flip the omelet.
  17. 17. Fry the omelet for another 1 to 2 minutes on the other side.
  18. 18. Remove the finished omelet from the pan.
  19. 19. Repeat the process with the remaining egg mixture to bake a second omelet.
  20. 20. Let both omelets cool down completely.
  21. 21. Spread the cheese-pepper cream evenly over the cooled omelets.

  23. 23. Wrap the omelet rolls tightly in cling film.
  24. 24. Place the wrapped rolls in the refrigerator to cool and set.
  25. 25. Peel the zucchini thoroughly.
  26. 26. Wash the zucchini.
  27. 27. Slice the zucchini into thin slices or strips.
  28. 28. Peel the onion.
  29. 29. Slice the onion into rings.
  30. 30. Heat olive oil in a pan.
  31. 31. Sauté the onion rings in the hot oil until translucent.
  32. 32. Add the zucchini slices to the onions.
  33. 33. Fry the zucchini briefly until tender-crisp.
  34. 34. Remove the pan from the heat and let the salad become lukewarm.
  35. 35. Take the omelet rolls out of the refrigerator.
  36. 36. Slice the rolls diagonally into thick pieces.
  37. 37. Place the omelet slices on the plates.
  38. 38. Garnish the plates with the lukewarm zucchini salad.
