🍽️ Omelette Rolls on Zucchini

Ingredients
- 1 red bell pepper
- 150 g goat cream cheese
- 2 tbsp tomato paste
- salt
- pepper (from the mill)
- 1 tsp chopped rosemary needles
- 150 g feta
- 6 eggs
- 2 tbsp butter
- 2 zucchini
- 1 onion
- 4 tbsp olive oil
- 3 tbsp lemon juice
Instructions
- 1. Wash the peppers thoroughly.
- 2. Remove the stem and seeds from the pepper.
- 3. Halve the pepper lengthwise.
- 4. Dice the pepper flesh into very fine cubes.
- 5. Stir the cream cheese with the tomato paste in a bowl until smooth.
- 6. Season the cream cheese mixture with salt and pepper to taste.
- 7. Finely chop the rosemary needles.
- 8. Fold in the chopped rosemary needles and the diced peppers into the cream cheese mixture.
- 9. Dice the feta into small cubes.
- 10. Whisk the eggs in a separate bowl.
- 11. Season the whisked eggs with salt and pepper.
- 12. Fold the feta cubes into the egg mixture.
- 13. Heat the butter in a non-stick pan.
- 14. Pour half of the egg mixture into the hot pan.
- 15. Let the omelet set over low heat until firm.
- 16. Carefully flip the omelet.
- 17. Fry the omelet for another 1 to 2 minutes on the other side.
- 18. Remove the finished omelet from the pan.
- 19. Repeat the process with the remaining egg mixture to bake a second omelet.
- 20. Let both omelets cool down completely.
- 21. Spread the cheese-pepper cream evenly over the cooled omelets.
- 22. Roll the omelets up tightly.
- 23. Wrap the omelet rolls tightly in cling film.
- 24. Place the wrapped rolls in the refrigerator to cool and set.
- 25. Peel the zucchini thoroughly.
- 26. Wash the zucchini.
- 27. Slice the zucchini into thin slices or strips.
- 28. Peel the onion.
- 29. Slice the onion into rings.
- 30. Heat olive oil in a pan.
- 31. Sauté the onion rings in the hot oil until translucent.
- 32. Add the zucchini slices to the onions.
- 33. Fry the zucchini briefly until tender-crisp.
- 34. Remove the pan from the heat and let the salad become lukewarm.
- 35. Take the omelet rolls out of the refrigerator.
- 36. Slice the rolls diagonally into thick pieces.
- 37. Place the omelet slices on the plates.
- 38. Garnish the plates with the lukewarm zucchini salad.
