🍽️ Truffle Omelette

Ingredients
- 4 eggs
- 30 g fresh black truffles
- salt
- pepper (from the mill)
- 2 tbsp butter
Instructions
- 1. Brush the truffles thoroughly clean and slice them into thin pieces. Whisk the eggs in a large bowl and stir in the truffle pieces. Cover the bowl and let the mixture rest at room temperature for about 30 minutes.
- 2. Add 2 tablespoons of water and lightly beat the egg-truffle mixture with a whisk. Season with salt and pepper. Melt the butter in a non-stick pan until it foams slightly.
- 3. Pour the egg mixture into the pan and let it set over medium heat until firm.
- 4. When the egg mixture is almost set but still moist inside, fold one edge of the omelette about one-third inward. Serve the omelette on a pre-warmed plate, garnished with parsley.
