  1. 1. Brush the truffles thoroughly clean and slice them into thin pieces. Whisk the eggs in a large bowl and stir in the truffle pieces. Cover the bowl and let the mixture rest at room temperature for about 30 minutes.
  2. 2. Add 2 tablespoons of water and lightly beat the egg-truffle mixture with a whisk. Season with salt and pepper. Melt the butter in a non-stick pan until it foams slightly.
  3. 3. Pour the egg mixture into the pan and let it set over medium heat until firm.
  4. 4. When the egg mixture is almost set but still moist inside, fold one edge of the omelette about one-third inward. Serve the omelette on a pre-warmed plate, garnished with parsley.
