🍽️ Crispy Spinach Omelette with Nuts

Ingredients
- 80 g young spinach
- 80 g hazelnut kernels (peeled)
- 2 shallots
- 2 garlic cloves
- 10 eggs
- 50 ml whipping cream
- 80 g grated cheese (e.g. Gruyère)
- salt
- pepper (from the mill)
- nutmeg
- 2 tbsp vegetable oil
Instructions
- 1. Turn on the grill function of your oven and preheat it.
- 2. Wash the spinach thoroughly, remove any tough stems, and spin it dry.
- 3. Place the nuts in a hot, oven-safe pan and roast them until golden brown.
- 4. Remove the nuts from the pan, let them cool, and then chop them coarsely.
- 5. Peel the shallots and garlic and cut them into fine cubes.
- 6. Whisk the eggs in a bowl with the cream and cheese.
- 7. Season the egg mixture with salt, pepper, and a pinch of nutmeg.
- 8. Take one quarter of the prepared ingredients for the first omelette.
- 9. Add one to two teaspoons of oil to a hot pan.
- 10. Sauté the shallot and garlic cubes in it until translucent.
- 11. Pour one quarter of the egg mixture over the onions.
- 12. Sprinkle the egg batter with the spinach and chopped nuts.
- 13. Let the omelette cook briefly until it sets slightly.
- 14. Place the pan under the hot grill for five to six minutes until the omelette is golden brown.
- 15. Repeat steps nine to fourteen with the remaining ingredients for three more omelettes.
- 16. Serve the omelettes immediately while hot.
