  1. 1. Turn on the grill function of your oven and preheat it.
  2. 2. Wash the spinach thoroughly, remove any tough stems, and spin it dry.
  3. 3. Place the nuts in a hot, oven-safe pan and roast them until golden brown.
  4. 4. Remove the nuts from the pan, let them cool, and then chop them coarsely.
  5. 5. Peel the shallots and garlic and cut them into fine cubes.
  6. 6. Whisk the eggs in a bowl with the cream and cheese.
  7. 7. Season the egg mixture with salt, pepper, and a pinch of nutmeg.
  8. 8. Take one quarter of the prepared ingredients for the first omelette.
  9. 9. Add one to two teaspoons of oil to a hot pan.
  10. 10. Sauté the shallot and garlic cubes in it until translucent.
  11. 11. Pour one quarter of the egg mixture over the onions.
  12. 12. Sprinkle the egg batter with the spinach and chopped nuts.
  13. 13. Let the omelette cook briefly until it sets slightly.
  14. 14. Place the pan under the hot grill for five to six minutes until the omelette is golden brown.
  15. 15. Repeat steps nine to fourteen with the remaining ingredients for three more omelettes.
  16. 16. Serve the omelettes immediately while hot.
