🍽️ Herb Omelette with Fresh Tomatoes

Ingredients
- 4 large eggs
- salt
- pepper (from the mill)
- 2 tbsp grated cheese
- 2 tbsp chopped herbs to taste (basil, chervil, parsley, chives...)
- 2 tbsp butter
- 10 cherry tomatoes
- basil (for garnishing)
- parsley (for garnishing)
Instructions
- 1. Carefully separate the eggs. Keep the yolks apart from the whites.
- 2. Place the egg yolks into a bowl.
- 3. Season the egg yolks with a pinch of salt and pepper.
- 4. Stir in the grated cheese and the chopped herbs.
- 5. Whip the egg whites in a clean bowl until very stiff.
- 6. Gently fold the whipped egg whites into the yolk mixture.
- 7. Heat the butter in a non-stick frying pan.
- 8. Pour the egg mixture into the hot pan.
- 9. Place a lid on the frying pan.
- 10. Turn the stove to the lowest setting.
- 11. Cook the omelette until the mixture is slightly set.
- 12. Fold the omelette in half.
- 13. Place the omelette onto a pre-warmed serving plate.
- 14. Garnish the dish with tomato wedges.
- 15. Sprinkle fresh basil and parsley over the top.
- 16. Serve the omelette immediately.
