  1. 1. Carefully separate the eggs. Keep the yolks apart from the whites.
  2. 2. Place the egg yolks into a bowl.
  3. 3. Season the egg yolks with a pinch of salt and pepper.
  4. 4. Stir in the grated cheese and the chopped herbs.
  5. 5. Whip the egg whites in a clean bowl until very stiff.
  6. 6. Gently fold the whipped egg whites into the yolk mixture.
  7. 7. Heat the butter in a non-stick frying pan.
  8. 8. Pour the egg mixture into the hot pan.
  9. 9. Place a lid on the frying pan.
  10. 10. Turn the stove to the lowest setting.
  11. 11. Cook the omelette until the mixture is slightly set.
  12. 12. Fold the omelette in half.
  13. 13. Place the omelette onto a pre-warmed serving plate.
  14. 14. Garnish the dish with tomato wedges.
  15. 15. Sprinkle fresh basil and parsley over the top.
  16. 16. Serve the omelette immediately.
