🍽️ Cod and Chili Omelette

Ingredients
- 4 eggs
- 2 red chili peppers
- 250 g cod fillet
- 1 tbsp lemon juice
- 1 tbsp vegetable oil
- 2 tbsp butter
- salt
- pepper
- parsley (for garnishing)
Instructions
- 1. Rinse the chili peppers under running water.
- 2. Cut one chili pepper in half lengthwise.
- 3. Remove the seeds and inner membrane, then rinse the half again.
- 4. Cut the cleaned half into thin strips.
- 5. Slice the remaining chili pepper into rings.
- 6. Rinse the cod fillets under cold water.
- 7. Pat the fish dry with a kitchen towel.
- 8. Cut the fish into bite-sized pieces.
- 9. Drizzle the fish pieces with lemon juice.
- 10. Season the fish with salt and pepper.
- 11. Heat oil and butter in a large frying pan.
- 12. Whisk the eggs in a bowl.
- 13. Season the eggs with salt and pepper.
- 14. Pour the egg mixture into the hot pan.
- 15. Distribute the fish pieces evenly over the still liquid eggs.
- 16. Place the chili rings on top of the omelette.
- 17. Cover the pan with a lid.
- 18. Let the omelette set over low heat.
- 19. Finally, adjust the seasoning of the finished omelette with salt and pepper.
- 20. Sprinkle the dish with fresh parsley.
- 21. Garnish it with the chili strips cut earlier.
- 22. Serve the omelette immediately.
