🍽️ Oven Omelette with Green Asparagus

Ingredients
- 5 stalks asparagus
- salt
- 1 pinch sugar
- 4 spring onions
- 1 clove garlic
- 2 tbsp butter
- 5 eggs
- 2 tbsp crème fraîche
- pepper (from the mill)
- nutmeg
- 2 tbsp freshly grated parmesan
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-assisted.
- 2. Peel the lower part of the asparagus stalks.
- 3. Boil water in a pot with some salt and a spoonful of sugar.
- 4. Add the asparagus stalks to the boiling water.
- 5. Cook the asparagus for about 10 minutes until tender but still firm.
- 6. Thoroughly wash the spring onions.
- 7. Remove the tough ends of the spring onions.
- 8. Slice the spring onions into thin rings.
- 9. Peel the garlic clove.
- 10. Mince the garlic very finely.
- 11. Heat butter in an oven-safe pan.
- 12. Sauté the garlic and spring onions in the hot butter for 1 to 2 minutes.
- 13. Whisk the eggs in a separate bowl.
- 14. Stir the crème fraîche into the eggs.
- 15. Season the egg mixture with salt, pepper, and grated nutmeg.
- 16. Pour the egg mixture over the onions in the pan.
- 17. Place the cooked asparagus stalks into the egg mixture.
- 18. Sprinkle the cheese evenly over the omelette.
- 19. Bake the omelette for 10 to 15 minutes in the oven until golden brown.
