  2. 2. Peel the lower part of the asparagus stalks.
  3. 3. Boil water in a pot with some salt and a spoonful of sugar.
  4. 4. Add the asparagus stalks to the boiling water.
  5. 5. Cook the asparagus for about 10 minutes until tender but still firm.
  6. 6. Thoroughly wash the spring onions.
  7. 7. Remove the tough ends of the spring onions.
  8. 8. Slice the spring onions into thin rings.
  9. 9. Peel the garlic clove.
  10. 10. Mince the garlic very finely.
  11. 11. Heat butter in an oven-safe pan.
  12. 12. Sauté the garlic and spring onions in the hot butter for 1 to 2 minutes.
  13. 13. Whisk the eggs in a separate bowl.
  14. 14. Stir the crème fraîche into the eggs.
  15. 15. Season the egg mixture with salt, pepper, and grated nutmeg.
  16. 16. Pour the egg mixture over the onions in the pan.
  17. 17. Place the cooked asparagus stalks into the egg mixture.
  18. 18. Sprinkle the cheese evenly over the omelette.
