🍳 Räucherlachs-Omelett auf Gurken

Ingredients
- 300 g cucumber
- 50 g salmon
- 3 eggs
- salt
- pepper (from the mill)
- 2 tbsp mineral water
- 2 tbsp kefir (or buttermilk)
- 2 tbsp dill
- 2 tbsp chives
- 1 tbsp rapeseed oil
- 1 box garden cress
Instructions
- 1. Peel the cucumber completely.
- 2. Slice the cucumber into thin rounds.
- 3. Place the cucumber slices on two plates.
- 4. Sprinkle the cucumber slices lightly with salt.
- 5. Cut the smoked salmon into small cubes.
- 6. Whisk the eggs in a bowl.
- 7. Add a pinch of salt to the eggs.
- 8. Add some pepper to the eggs.
- 9. Add sparkling water to the eggs.
- 10. Add kefir to the eggs.
- 11. Finely chop the herbs dill and chives.
- 12. Fold the chopped herbs into the egg mixture.
- 13. Heat the oil in a non-stick frying pan.
- 14. Pour the egg mixture into the hot pan.
- 15. Let the omelette set over low heat.
- 16. Distribute the salmon cubes on the omelette.
- 17. Add fresh cress to the omelette.
- 18. Fold the omelette together.
- 19. Divide the omelette into two halves.
- 20. Place the omelette halves on the cucumber slices.
- 21. Serve the dish immediately while warm.
