🍽️ Bean Omelettes with Pine Nuts

Ingredients
- 50 g pine nuts
- 500 g green beans
- 2 handfuls chives
- 10 eggs
- 2 tbsp heavy cream
- 40 g grated Emmental cheese
- salt
- pepper (from a mill)
- 4 tbsp sunflower oil
Instructions
- 1. Heat a pan without fat.
- 2. Add the pine nuts to the pan.
- 3. Toast the pine nuts until they are golden brown.
- 4. Remove the pine nuts from the pan and set them aside.
- 5. Wash the beans thoroughly.
- 6. Trim the ends of the beans.
- 7. Bring salted water to a boil.
- 8. Boil the beans for about 6 minutes.
- 9. Rinse the chives under running water.
- 10. Shake the chives dry.
- 11. Remove any dirty parts from the chives.
- 12. Remove the beans from the cooking water.
- 13. Rinse the beans with cold water.
- 14. Let the beans drain well.
- 15. Take 3 to 4 beans at a time.
- 16. Wrap the beans with chive stalks.
- 17. Tie the bean packets securely.
- 18. Slice the remaining chives into fine rings.
- 19. Whisk the eggs in a bowl.
- 20. Stir the cream into the eggs.
- 21. Add the grated Emmental cheese.
- 22. Whisk the mixture thoroughly.
- 23. Season the egg mixture with salt.
- 24. Season the egg mixture with pepper.
- 25. Heat one tablespoon of oil in a rectangular pan.
- 26. Pour about one quarter of the egg mixture into the hot pan.
- 27. Place about 5 bean packets on the egg.
- 28. Sprinkle one quarter of the pine nuts over it.
- 29. Fry the omelette for about 4 minutes.
- 30. Flip the omelette when the underside is golden brown.
- 31. Fry the other side until the egg is set.
- 32. Remove the finished omelette from the pan.
- 33. Repeat the process with the remaining egg mixture.
- 34. Bake a total of 4 omelettes.
- 35. Sprinkle the finished omelettes with the chive rings.
