  3. 3. Toast the pine nuts until they are golden brown.
  4. 4. Remove the pine nuts from the pan and set them aside.
  5. 5. Wash the beans thoroughly.
  6. 6. Trim the ends of the beans.
  7. 7. Bring salted water to a boil.
  8. 8. Boil the beans for about 6 minutes.
  9. 9. Rinse the chives under running water.
  10. 10. Shake the chives dry.
  11. 11. Remove any dirty parts from the chives.
  12. 12. Remove the beans from the cooking water.
  13. 13. Rinse the beans with cold water.
  14. 14. Let the beans drain well.
  15. 15. Take 3 to 4 beans at a time.
  16. 16. Wrap the beans with chive stalks.
  17. 17. Tie the bean packets securely.
  18. 18. Slice the remaining chives into fine rings.
  19. 19. Whisk the eggs in a bowl.
  20. 20. Stir the cream into the eggs.
  21. 21. Add the grated Emmental cheese.
  22. 22. Whisk the mixture thoroughly.

  25. 25. Heat one tablespoon of oil in a rectangular pan.
  26. 26. Pour about one quarter of the egg mixture into the hot pan.
  27. 27. Place about 5 bean packets on the egg.
  28. 28. Sprinkle one quarter of the pine nuts over it.
  29. 29. Fry the omelette for about 4 minutes.
  30. 30. Flip the omelette when the underside is golden brown.

  32. 32. Remove the finished omelette from the pan.
  33. 33. Repeat the process with the remaining egg mixture.
  34. 34. Bake a total of 4 omelettes.
  35. 35. Sprinkle the finished omelettes with the chive rings.
