  1. 1. Clean the beans and cut them in half if necessary. Boil them in salted water for 10 minutes, shock them immediately with cold water, and let them drain well.
  2. 2. Peel the onions and chop them finely. Slice the blood sausage into thin pieces.
  3. 3. Heat one tablespoon of ghee in a large pan. Sauté the onions in it. Add the blood sausage and beans and fry everything while stirring for a few minutes. Season with pepper and some thyme, then remove the mixture from the pan.
  4. 4. Wash and peel the potatoes. Cut them into very thin matchsticks. Heat the remaining ghee in the same pan and fry the potatoes in batches until well browned. Season with salt and pepper and cook for 10 minutes.
  5. 5. Distribute the blood sausage and bean mixture evenly over the potatoes.
  6. 6. Crack the eggs and whisk them. Season with salt, pepper, and thyme, then stir in the cream. Pour the mixture over the potatoes. Cover the pan and let the omelet set for a few minutes.
  7. 7. Garnish the dish with fresh thyme if desired.
