  1. 1. Mix flour, ground walnuts, and salt in a bowl.
  2. 2. Make a well in the center of the flour mixture.
  3. 3. Add 2 tablespoons of honey, one egg, and cold butter cut into cubes into the well.
  4. 4. Chop everything roughly with a large knife or a dough scraper until the wet and dry ingredients combine.
  5. 5. Knead the dough into a smooth ball.
  6. 6. Wrap the dough in plastic wrap.
  7. 7. Store the dough in the refrigerator for about 30 minutes.
  8. 8. Peel the apples.
  9. 9. Quarter the apples and remove the core.
  10. 10. Slice the apple pieces into thin wedges.
  11. 11. Mix the apple wedges with 2 tablespoons of honey, vanilla powder, raisins, walnuts, and cinnamon.
  12. 12. Line the bottom of a springform pan with baking paper.
  13. 13. Knead the dough briefly.
  14. 14. Roll out the dough on a lightly floured surface to a thickness of about 4 millimeters.
  15. 15. Cut a circle from the dough that matches the size of the springform pan (24 cm diameter).
  16. 16. Place the dough circle into the springform pan.
  17. 17. Knead the remaining dough together.
  18. 18. Form small rolls from the remaining dough.
  19. 19. Place the dough rolls around the edge of the cake.
  20. 20. Press the dough rolls firmly into place.

  22. 22. Distribute the apple mixture evenly over the dough.
  23. 23. Whisk the remaining eggs with milk and the remaining honey.
  24. 24. Pour the egg-honey mixture over the cake.
  25. 25. Preheat the oven to 180 °C (convection: 160 °C; gas: setting 2–3).
  26. 26. Bake the cake for 50 to 60 minutes in the preheated oven.
