🍰 Grandma's Walnut Apple Cake

Ingredients
- 150 g spelt flour Type 1050
- 30 g ground walnuts
- 1 pinch salt
- 5 tbsp honey
- 3 eggs (size M)
- 75 g cold butter
- 1 kg tart apples
- 0.5 tsp vanilla powder
- 50 g raisins
- 50 g walnuts
- 0.5 tsp cinnamon
- 125 ml milk (3.5% fat)
Instructions
- 1. Mix flour, ground walnuts, and salt in a bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Add 2 tablespoons of honey, one egg, and cold butter cut into cubes into the well.
- 4. Chop everything roughly with a large knife or a dough scraper until the wet and dry ingredients combine.
- 5. Knead the dough into a smooth ball.
- 6. Wrap the dough in plastic wrap.
- 7. Store the dough in the refrigerator for about 30 minutes.
- 8. Peel the apples.
- 9. Quarter the apples and remove the core.
- 10. Slice the apple pieces into thin wedges.
- 11. Mix the apple wedges with 2 tablespoons of honey, vanilla powder, raisins, walnuts, and cinnamon.
- 12. Line the bottom of a springform pan with baking paper.
- 13. Knead the dough briefly.
- 14. Roll out the dough on a lightly floured surface to a thickness of about 4 millimeters.
- 15. Cut a circle from the dough that matches the size of the springform pan (24 cm diameter).
- 16. Place the dough circle into the springform pan.
- 17. Knead the remaining dough together.
- 18. Form small rolls from the remaining dough.
- 19. Place the dough rolls around the edge of the cake.
- 20. Press the dough rolls firmly into place.
- 21. Prick the dough base several times with a fork.
- 22. Distribute the apple mixture evenly over the dough.
- 23. Whisk the remaining eggs with milk and the remaining honey.
- 24. Pour the egg-honey mixture over the cake.
- 25. Preheat the oven to 180 °C (convection: 160 °C; gas: setting 2–3).
- 26. Bake the cake for 50 to 60 minutes in the preheated oven.
