  1. 1. Put honey, sugar, butter, and milk into a pot.
  2. 2. Heat the mixture over medium heat.
  3. 3. Stir until the sugar is completely dissolved.
  4. 4. Let the mixture cool down.
  5. 5. Mix flour, cornstarch, almonds, and spices in a large bowl.
  6. 6. Add the cooled honey mixture and 2 eggs.
  7. 7. Dissolve saleratus (a leavening agent) in 2 tablespoons of water in a small bowl.
  8. 8. Add it.
  9. 9. Knead everything thoroughly with a hand mixer and dough hook.
  10. 10. Knead until the dough shines and no longer sticks.
  11. 11. Add a little more flour if necessary.
  12. 12. Cover the bowl.
  13. 13. Let the dough rest in the refrigerator overnight.
  14. 14. Line a baking sheet with parchment paper.
  15. 15. Roll out the dough on a floured surface.
  16. 16. Cut it into rectangles.
  17. 17. Decorate them with almonds.
  18. 18. Place the pieces on the sheet.
  19. 19. Whisk 1 egg with 2 tablespoons of water.
  20. 20. Brush the lebkuchen with it.
  21. 21. Bake them in the preheated oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 20 minutes.
  22. 22. Remove the lebkuchen from the sheet.
  23. 23. Let them cool on a wire rack.
