🍰 Grandma's Sheet Pan Lebkuchen

Ingredients
- 125 g honey
- 125 g sugar
- 50 g butter
- 125 ml milk (3.5% fat)
- 400 g flour (+ 1 tbsp for working)
- 150 g cornstarch
- 100 g ground almonds
- 1 tsp cinnamon
- 0.5 tsp cardamom
- 0.25 tsp ground cloves
- 1 pinch nutmeg
- 1 pinch anise
- 3 eggs
- 7 g potash
- 100 g almond kernels (peeled)
Instructions
- 1. Put honey, sugar, butter, and milk into a pot.
- 2. Heat the mixture over medium heat.
- 3. Stir until the sugar is completely dissolved.
- 4. Let the mixture cool down.
- 5. Mix flour, cornstarch, almonds, and spices in a large bowl.
- 6. Add the cooled honey mixture and 2 eggs.
- 7. Dissolve saleratus (a leavening agent) in 2 tablespoons of water in a small bowl.
- 8. Add it.
- 9. Knead everything thoroughly with a hand mixer and dough hook.
- 10. Knead until the dough shines and no longer sticks.
- 11. Add a little more flour if necessary.
- 12. Cover the bowl.
- 13. Let the dough rest in the refrigerator overnight.
- 14. Line a baking sheet with parchment paper.
- 15. Roll out the dough on a floured surface.
- 16. Cut it into rectangles.
- 17. Decorate them with almonds.
- 18. Place the pieces on the sheet.
- 19. Whisk 1 egg with 2 tablespoons of water.
- 20. Brush the lebkuchen with it.
- 21. Bake them in the preheated oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 20 minutes.
- 22. Remove the lebkuchen from the sheet.
- 23. Let them cool on a wire rack.
