🍽️ Grandma's Fish Soup

Ingredients
- 400 g mixed fish fillet (cod, pollock, sole and other)
- 2 tbsp lemon juice
- salt
- 500 g fish trimmings (head, tail, bones)
- 1 package frozen soup vegetables
- 1 bay leaf
- 4 white peppercorns
- 500 ml water
- 250 ml dry white wine
- 1 crushed garlic clove
- 1 pinch saffron
- 1 package light sauce mix
- 125 g mussel meat
- 200 g squid rings
- 200 g deep-sea crab
- 2 tbsp chopped parsley
Instructions
- 1. Rinse the fish fillet pieces and pat them dry.
- 2. Lightly salt the fillet pieces and set them aside.
- 3. Place the fish scraps, vegetable stock mix, bay leaf, salt, pepper, and water into a pot.
- 4. Let the mixture simmer uncovered for 20 minutes.
- 5. Strain the broth through a sieve into a clean pot.
- 6. Add the wine, garlic, saffron, and the prepared fillet pieces to the broth.
- 7. Let the soup steep for 8 minutes.
- 8. Carefully remove the fillet pieces and keep them warm.
- 9. Stir the white sauce into the soup until it has dissolved.
- 10. Add the mussel meat, squid rings, and crab meat to the soup.
- 11. Let the soup steep for another 5 minutes.
- 12. Finally, season the soup to taste with salt and pepper.
- 13. Sprinkle fresh parsley over the soup.
- 14. Serve the fish soup immediately while hot.
