  1. 1. Rinse the meat under running water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into equal-sized, bite-sized cubes.
  3. 3. Remove the marrow from the bones and slice it.
  4. 4. Peel the celery and onions and dice them finely.
  5. 5. Peel the carrots and parsley roots and slice them.
  6. 6. Wash the potatoes, peel them, and cut them into quarters lengthwise.
  7. 7. Then cut the potato quarters into cubes.
  8. 8. Wash the savoy cabbage, remove the hard stems, and cut it into strips.
  9. 9. Heat the oil in a large pot.
  10. 10. Fry the meat cubes in batches until browned on all sides (approx. 3 minutes).
  11. 11. Remove the browned meat from the pot and set it aside.
  12. 12. Place the marrow slices from one bone on the bottom of the pot.
  13. 13. Layer the meat, potatoes, and vegetables alternately in the pot.
  14. 14. Season each layer with salt, pepper, and cumin.
  15. 15. Place the remaining marrow slices on top of the vegetables.
  16. 16. Pour the meat broth over everything.
  17. 17. Cover the pot with a lid.
  18. 18. Let the stew simmer for approx. 1.5 hours.
  19. 19. Season the stew to taste with salt and pepper after cooking.
  20. 20. Serve the stew hot in soup plates.
