🍲 Grandma's Beef Stew

Ingredients
- 750 g beef brisket
- 2 marrow bones
- 200 g celeriac
- 2 onions
- 4 carrots
- 2 parsley roots
- 400 g floury-cooking potatoes
- 0.25 savoy cabbage head (approx. 200 g)
- 2 tbsp vegetable oil
- salt
- pepper (from the mill)
- 0.5 l meat broth
- 1 tsp caraway seeds
Instructions
- 1. Rinse the meat under running water and pat it dry with a kitchen towel.
- 2. Cut the meat into equal-sized, bite-sized cubes.
- 3. Remove the marrow from the bones and slice it.
- 4. Peel the celery and onions and dice them finely.
- 5. Peel the carrots and parsley roots and slice them.
- 6. Wash the potatoes, peel them, and cut them into quarters lengthwise.
- 7. Then cut the potato quarters into cubes.
- 8. Wash the savoy cabbage, remove the hard stems, and cut it into strips.
- 9. Heat the oil in a large pot.
- 10. Fry the meat cubes in batches until browned on all sides (approx. 3 minutes).
- 11. Remove the browned meat from the pot and set it aside.
- 12. Place the marrow slices from one bone on the bottom of the pot.
- 13. Layer the meat, potatoes, and vegetables alternately in the pot.
- 14. Season each layer with salt, pepper, and cumin.
- 15. Place the remaining marrow slices on top of the vegetables.
- 16. Pour the meat broth over everything.
- 17. Cover the pot with a lid.
- 18. Let the stew simmer for approx. 1.5 hours.
- 19. Season the stew to taste with salt and pepper after cooking.
- 20. Serve the stew hot in soup plates.
