  1. 1. Peel the hard-boiled eggs and cut them in half.
  2. 2. Carefully remove the yolks and save the egg whites for another use.
  3. 3. Press the yolks through a fine sieve into a bowl.
  4. 4. Add the fresh egg yolk, powdered sugar, and vanilla seeds.
  5. 5. Whisk the mixture until it is creamy and smooth.
  6. 6. Fold in the soft butter.
  7. 7. Add the flour spoonful by spoonful and knead it in briefly.
  8. 8. Place the dough in the refrigerator for 30 minutes.
  9. 9. Roll out the dough on a floured surface to a thickness of about 0.5 centimeters.
  10. 10. Cut out small rings with a diameter of 6 to 7 centimeters.
  11. 11. Place the rings on a baking sheet lined with baking paper.
  12. 12. Preheat the oven to 200 degrees Celsius.
  13. 13. Bake the cookies for 10 to 12 minutes until golden brown.
  14. 14. Brush the still warm rings thinly with lemon glaze.
  15. 15. Immediately sprinkle them with a mixture of nonpareils and chopped almonds.
