🍰 Grandma's Preserved Apricots

Ingredients
- 1 kg apricots
- 300 ml wine vinegar
- 100 ml alcohol-free rum (alternative: orange juice with a dash of rum flavor)
- 200 g sugar
- 1 vanilla pod
- 1 star anise
- 0.5 tsp cardamom pods
- 0.5 tsp clove
- 1 cinnamon stick
Instructions
- 1. Pour boiling water over the apricots.
- 2. Immediately rinse the fruits with cold water to stop the cooking process.
- 3. Peel the skin off the apricots.
- 4. Add the vinegar, rum, 200 milliliters of water, sugar, vanilla pod, star anise, cardamom pods, cloves, and cinnamon stick to a pot.
- 5. Bring the spice mixture to a boil.
- 6. Add the peeled apricots to the boiling liquid.
- 7. Let the mixture come to a boil again.
- 8. Fill the hot apricots and liquid into clean preserving jars.
- 9. Seal the jars tightly.
- 10. Let the jars steep for at least two weeks before consuming.
