  1. 1. Pour boiling water over the apricots.
  2. 2. Immediately rinse the fruits with cold water to stop the cooking process.
  3. 3. Peel the skin off the apricots.
  4. 4. Add the vinegar, rum, 200 milliliters of water, sugar, vanilla pod, star anise, cardamom pods, cloves, and cinnamon stick to a pot.
  5. 5. Bring the spice mixture to a boil.
  6. 6. Add the peeled apricots to the boiling liquid.
  7. 7. Let the mixture come to a boil again.
  8. 8. Fill the hot apricots and liquid into clean preserving jars.
  9. 9. Seal the jars tightly.
  10. 10. Let the jars steep for at least two weeks before consuming.
