🍽️ Creamy Olive Dip with Pine Nuts

Ingredients
- 2 tbsp pine nuts
- 2 anchovy fillets
- 100 g green olives (pitted)
- 2 tbsp fresh chopped parsley
- 2 tbsp olive oil
- 200 g goat cream cheese
- salt
- pepper (from the mill)
Instructions
- 1. Place the pine nuts in a dry frying pan.
- 2. Roast the nuts over medium heat until they smell fragrant.
- 3. Remove the pan from the heat and transfer the pine nuts to a plate.
- 4. Let the pine nuts cool down completely.
- 5. Pat the anchovy fillets dry with a kitchen towel.
- 6. Roughly chop the olives.
- 7. Add the chopped olives, cooled pine nuts, parsley, olive oil, anchovies, and goat cream cheese to a blender.
- 8. Blend the ingredients until you have a smooth, fine cream.
- 9. Season the cream to taste with salt and pepper.
- 10. Spoon the olive cream into small serving bowls.
- 11. Serve the dip immediately.
