  1. 1. Pour 200 ml of lukewarm water into a bowl.
  2. 2. Crumble the yeast into the water and stir until dissolved.
  3. 3. Chop the olives coarsely.
  4. 4. Add flour, spelt flour, salt, and the chopped olives to the yeast mixture.
  5. 5. Add the olive oil as well.
  6. 6. Knead everything with the dough hooks of a hand mixer until you have a smooth dough.
  7. 7. Cover the bowl with a clean kitchen towel.
  8. 8. Let the dough rise in a warm place for about 1 hour.
  9. 9. Take thick wooden sticks about 60 cm long.
  10. 10. Remove the bark from one end of the sticks or wrap that end in aluminum foil.
  11. 11. Knead the dough once more briefly.
  12. 12. Divide the dough into 8 equal portions.
  13. 13. Wrap each dough portion tightly around a wooden stick.
  14. 14. Grill the breads over the hot grill.
  15. 15. Grill them for 10 to 15 minutes until they are brown.
