Ingredients
- 500 g black olives
- 4 garlic cloves
- 1 onion
- 3 bay leaves
- 1 tbsp rosemary
- 1 tbsp thyme
- 1 piece untreated orange peel
- 12 coriander seeds
- 5 dried red chili peppers
- 500 ml olive oil
Instructions
- 1. Peel the onion.
- 2. Cut the peeled onion lengthwise into eight equal pieces.
- 3. Peel the garlic cloves.
- 4. Halve the garlic cloves.
- 5. Take a clean jar.
- 6. Layer the olives alternately with the onion pieces and the garlic in the jar.
- 7. Mix the spices thoroughly with the olive oil.
- 8. Pour the spiced oil over the layers in the jar.
- 9. Let the olives infuse for at least two days.
- 10. Store the jar in a cool place.
- 11. The well-sealed olives keep for three months.
