🍽️ Okra in Tomato Sauce

Ingredients
- 300 g okra pods
- 2 tbsp oil
- 1 clove garlic (pressed)
- 1 shallot (finely chopped)
- 4 tomatoes (peeled, seeded and roughly diced)
- 1 tsp sugar
- 100 ml white wine
- lemon (juice)
- 1 tsp cornstarch
- butter
Instructions
- 1. Heat oil in a pan.
- 2. Fry the okra pods for about 5 minutes.
- 3. Add the garlic.
- 4. Let the garlic cook briefly.
- 5. Remove the pan from the heat.
- 6. Keep the okra warm.
- 7. Melt butter in a clean pan.
- 8. Sweat the shallot in the butter.
- 9. Stir in the sugar.
- 10. Let the sugar caramelize slightly.
- 11. Deglaze the mixture with lemon juice.
- 12. Deglaze the mixture with wine.
- 13. Reduce the liquid to half.
- 14. Mix the cornstarch with a little water.
- 15. Thicken the sauce with the starch.
- 16. Add the tomatoes.
- 17. Season the sauce to taste.
- 18. Simmer the sauce for about 3 to 4 minutes.
- 19. Add the okra pods to the sauce.
- 20. Plate the dish.
