  7. 7. Melt butter in a clean pan.
  8. 8. Sweat the shallot in the butter.
  9. 9. Stir in the sugar.
  10. 10. Let the sugar caramelize slightly.
  11. 11. Deglaze the mixture with lemon juice.
  12. 12. Deglaze the mixture with wine.
  13. 13. Reduce the liquid to half.
  14. 14. Mix the cornstarch with a little water.
  15. 15. Thicken the sauce with the starch.
  16. 16. Add the tomatoes.
  17. 17. Season the sauce to taste.
  18. 18. Simmer the sauce for about 3 to 4 minutes.
