🥗 Baked salmon with lemon and avocado-apple salad

Ingredients
- 600 g Norwegian salmon fillet (skinless and boneless)
- 2 tbsp soy sauce
- 4 tbsp olive oil
- 1 lemon
- salt
- pepper
- 2 spring onions
- 0.5 green apple
- 1 romaine lettuce
- 1 avocado
- 3 tbsp lemon juice
- 3 tbsp olive oil
- 0.5 tsp coarse sea salt
- natural rice (brown rice)
Instructions
- 1. Preheat the oven to 180 degrees Celsius (Gas mark 4).
- 2. Cut the salmon into portions and place them in a baking dish.
- 3. Drizzle soy sauce and olive oil over the fish and season with salt and pepper.
- 4. Add lemon juice and the grated lemon zest and bake everything for about 10 to 12 minutes.
- 5. Cut the onion, cut the apple into strips and shred the salad.
- 6. Cut the avocado in half and cut it into pieces.
- 7. Mix the onions, the apple strips, the salad and the avocado.
- 8. Mix lemon juice, olive oil and sea salt and pour the mixture over the salad.
- 9. Serve the salmon with the salad and rice.
