🍽️ Crispy Oven Potatoes with Chanterelles

Ingredients
- 500 g firm-cooking potatoes
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 400 g mixed mushrooms (chanterelles, oyster mushrooms, porcini)
- 2 garlic cloves
- 1 tsp freshly chopped thyme
- 1 tsp freshly chopped rosemary
- 1 tbsp freshly chopped parsley
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Slice the potatoes lengthwise into thin slices or use a slicer.
- 4. Place the slices on a baking tray lined with baking paper.
- 5. Drizzle the potatoes with 3 tablespoons of olive oil.
- 6. Season everything generously with salt and pepper.
- 7. Roast the potatoes in the preheated oven for 25 to 30 minutes until golden brown.
- 8. Turn the potato slices occasionally during the roasting time.
- 9. Clean the chanterelles and cut them into smaller pieces if necessary.
- 10. Peel the garlic and chop it finely.
- 11. Heat the remaining oil in a pan.
- 12. Sauté the garlic until translucent.
- 13. Add the mushrooms and herbs to the pan.
- 14. Fry the mixture for 5 to 8 minutes.
- 15. Wait until the mushroom liquid has completely evaporated.
- 16. Mix the finished potato slices with the mushrooms.
- 17. Finally, adjust the seasoning of the mixture with salt and pepper.
- 18. Fill the dish into small bowls.
- 19. Sprinkle with fresh parsley and serve.
