  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Wrap each potato individually in a piece of aluminum foil.
  3. 3. Poke the foil several times with a wooden skewer to allow steam to escape.
  4. 4. Preheat the oven to 180 degrees Celsius.
  5. 5. Place the potatoes on a baking tray and bake them for about 40 minutes.
  6. 6. Take the potatoes out of the oven and remove them from the foil.
  7. 7. Cut a cross shape into the top of each potato.
  8. 8. Gently press the potatoes apart to create a well.
  9. 9. Top the potatoes with the salmon.
  10. 10. Place a dollop of crème fraîche on each piece of salmon.
  11. 11. Sprinkle the dish with coarse black pepper.
  12. 12. Garnish the potatoes with fresh chives.
