  2. 2. Wash the potatoes with the skin and dry them.
  3. 3. Place each potato on a piece of aluminum foil.
  4. 4. Wrap the aluminum foil tightly around the potato.
  5. 5. Place the wrapped potatoes on a baking sheet.
  6. 6. Bake the potatoes for about 50 minutes.
  7. 7. Stir Creme Fraiche with lemon juice until smooth.
  8. 8. Season the Creme Fraiche with salt and pepper.
  9. 9. Take the potatoes out of the oven.
  10. 10. Open the aluminum foil around the potatoes.
  11. 11. Cut the potatoes in a cross shape.
  12. 12. Press the potatoes apart.
  13. 13. Place a dollop of the seasoned Creme Fraiche in the center.
  14. 14. Top the potato with caviar.
  15. 15. Serve the potato immediately.
