🍽️ Stuffed Baked Potatoes with Vegetables

Ingredients
- 4 large floury potatoes (approx. 250 g each)
- 100 g small broccoli florets
- salt
- 1 red bell pepper
- 1 small zucchini
- 1 red onion
- 100 g grated cheese (e.g. cheddar)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes until tender, which takes about 35 minutes.
- 3. Preheat the oven to 200°C with fan setting.
- 4. Wash the broccoli.
- 5. Blanch the broccoli (cook briefly in boiling water) in salted water for 3 to 4 minutes until al dente.
- 6. Rinse the broccoli with cold water and let it drain.
- 7. Wash the bell pepper.
- 8. Halve the bell pepper and remove the core.
- 9. Dice the bell pepper into small pieces.
- 10. Wash the zucchini.
- 11. Remove the hard ends of the zucchini.
- 12. Dice the zucchini into small pieces.
- 13. Peel the onion.
- 14. Dice the onion.
- 15. Mix the prepared vegetables with the cheese.
- 16. Remove the cooked potatoes from the water.
- 17. Slice the potatoes lengthwise in the middle.
- 18. Gently press the potato halves apart.
- 19. Fill the potatoes with the vegetable and cheese mixture.
- 20. Place the stuffed potatoes on a baking sheet lined with baking paper.
- 21. Bake the potatoes in the oven for about 15 minutes.
