🍽️ Oven Carrots

Ingredients
- 800 g carrots
- 2 onions
- 2 tbsp olive oil (20 ml each)
- salt
- pepper (from the mill)
- 150 ml vegetable broth
- 1 tbsp honey
- 1 handful young spinach leaves
- 200 g feta cheese (9% fat absolute)
- 2 tbsp sesame seeds
Instructions
- 1. Preheat the oven to 225 °C. Use fan-forced air at 200 °C or gas level 3–4.
- 2. Peel the carrots and cut them in half lengthwise.
- 3. Peel the onions and slice them into rings.
- 4. Heat oil in a pan and briefly fry the carrots in it.
- 5. Season the carrots with salt and pepper.
- 6. Add the onion rings to the pan and cook everything together for 1 to 2 minutes.
- 7. Deglaze the mixture with the broth.
- 8. Stir the honey into the mixture.
- 9. Cover the pan and let the ingredients cook for 5 minutes.
- 10. Wash the spinach during this time.
- 11. Remove tough stems and wilted leaves from the spinach.
- 12. Let the spinach drain well.
- 13. Add the spinach to the carrots in the pan.
- 14. Cook the vegetables without the lid until the liquid has almost completely evaporated.
- 15. Transfer the entire mixture into a baking dish.
- 16. Crumble the feta cheese over the vegetables.
- 17. Sprinkle sesame seeds over the top.
- 18. Season the dish once more with salt and pepper.
- 19. Place the baking dish in the oven and bake until golden brown for 10 minutes.
- 20. Remove the oven carrots from the oven.
- 21. Preheat a serving plate.
- 22. Arrange the carrots on the warm plate and serve.
