  3. 3. Dice the apple flesh into very small cubes.
  4. 4. Peel the shallot.
  5. 5. Dice the shallot into fine cubes as well.
  6. 6. Place the diced apples and shallots into a bowl.
  7. 7. Pour the malt vinegar over the vegetables.
  8. 8. Season the mixture with salt and pepper.
  9. 9. Stir the ingredients well together.
  10. 10. Add the rapeseed oil.
  11. 11. Whisk the mixture into a homogeneous vinaigrette.
  12. 12. Wash the dill.
  13. 13. Shake the dill dry.
  14. 14. Pluck the small dill leaves from the stems.
  15. 15. Finely chop the dill leaves.
  16. 16. Set the vinaigrette aside.
  17. 17. Add the finely chopped dill leaves to the vinaigrette.
  18. 18. Mix the dill thoroughly into the vinaigrette.
  19. 19. Place the breadcrumbs into a shallow dish.
  20. 20. Add the Parmesan cheese to the breadcrumbs.
  21. 21. Mix the breadcrumbs with the cheese.
  22. 22. Whisk the egg in a separate bowl.
  23. 23. Rinse the fish pieces under running water.
  24. 24. Pat the fish pieces dry with kitchen paper.
  25. 25. Season the fish pieces with salt and pepper.
  26. 26. Coat the fish pieces in the flour.
  27. 27. Dip the floured fish pieces into the whisked egg.
  28. 28. Then coat the fish pieces in the breadcrumb-cheese mixture.
  29. 29. Press the breadcrumbs firmly onto the fish.
  30. 30. Lightly grease a baking tray with oil.
  31. 31. Place the breaded fish pieces on the baking tray.
  32. 32. Preheat the oven to 250 °C.
  33. 33. Do not use the fan (convection) setting.
  34. 34. Set the oven to the highest gas setting if you use gas.
  35. 35. Bake the fish for 12 to 15 minutes.
  36. 36. Remove the fish from the oven when it is crispy.
  37. 37. Serve the fish together with the apple-dill vinaigrette.
  38. 38. Garnish the dish with a green salad.
