🍽️ Crispy Oven-Breaded Fish with Apple-Dill Vinaigrette

Ingredients
- 150 g green apples (1 green apple)
- 1 shallot
- 1.5 tbsp malt vinegar
- salt
- pepper
- 3 tbsp rapeseed oil
- 3 sprigs dill
- 4 tbsp whole wheat breadcrumbs
- 2 tsp grated parmesan
- 1 egg
- 320 g cod fillets (2 cod fillets)
- 2 tbsp spelt whole wheat flour
Instructions
- 1. Wash the apple thoroughly.
- 2. Remove the core from the apple.
- 3. Dice the apple flesh into very small cubes.
- 4. Peel the shallot.
- 5. Dice the shallot into fine cubes as well.
- 6. Place the diced apples and shallots into a bowl.
- 7. Pour the malt vinegar over the vegetables.
- 8. Season the mixture with salt and pepper.
- 9. Stir the ingredients well together.
- 10. Add the rapeseed oil.
- 11. Whisk the mixture into a homogeneous vinaigrette.
- 12. Wash the dill.
- 13. Shake the dill dry.
- 14. Pluck the small dill leaves from the stems.
- 15. Finely chop the dill leaves.
- 16. Set the vinaigrette aside.
- 17. Add the finely chopped dill leaves to the vinaigrette.
- 18. Mix the dill thoroughly into the vinaigrette.
- 19. Place the breadcrumbs into a shallow dish.
- 20. Add the Parmesan cheese to the breadcrumbs.
- 21. Mix the breadcrumbs with the cheese.
- 22. Whisk the egg in a separate bowl.
- 23. Rinse the fish pieces under running water.
- 24. Pat the fish pieces dry with kitchen paper.
- 25. Season the fish pieces with salt and pepper.
- 26. Coat the fish pieces in the flour.
- 27. Dip the floured fish pieces into the whisked egg.
- 28. Then coat the fish pieces in the breadcrumb-cheese mixture.
- 29. Press the breadcrumbs firmly onto the fish.
- 30. Lightly grease a baking tray with oil.
- 31. Place the breaded fish pieces on the baking tray.
- 32. Preheat the oven to 250 °C.
- 33. Do not use the fan (convection) setting.
- 34. Set the oven to the highest gas setting if you use gas.
- 35. Bake the fish for 12 to 15 minutes.
- 36. Remove the fish from the oven when it is crispy.
- 37. Serve the fish together with the apple-dill vinaigrette.
- 38. Garnish the dish with a green salad.
