🍽️ Springtime Yeast Bread with Carrots and Nuts

Ingredients
- 1 carrot
- 0.5 cube fresh yeast (21 g)
- 50 g sugar
- 125 ml lukewarm milk
- 500 g flour
- 1 pinch salt
- 1 egg
- 80 g ground pine nuts
- 100 ml buttermilk

- 75 g sunflower seeds
- 1 egg yolk
- 20 g pine nuts
Instructions
- 1. Peel the carrot and grate it finely.
- 2. Crumble the yeast into the lukewarm milk.
- 3. Stir in the sugar until the mixture is smooth.
- 4. Add the flour, salt, grated carrots, egg, pine nuts, and buttermilk to a large bowl.
- 5. Pour in the milk-yeast mixture.
- 6. Knead the dough with the mixer's dough hooks until it is smooth and no longer sticks to the sides of the bowl.
- 7. If the dough is too sticky, add a little more flour; if it is too dry, add a little more buttermilk.
- 8. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 9. Sprinkle some flour on your work surface.
- 10. Take the dough out and knead it vigorously.
- 11. Work about 50 grams of the sunflower seeds into the dough.
- 12. Divide the dough into two equal parts.
- 13. Shape each part into a long strand about 40 centimeters long.
- 14. Braid the two strands together.
- 15. Press the ends together firmly so the braid does not unravel.
- 16. Place the braided dough on a baking sheet lined with baking paper.
- 17. Let the dough rise again for about 15 minutes.
- 18. Preheat the oven to 180 degrees (turn off convection or use top/bottom heat).
- 19. Whisk the egg yolk with one tablespoon of water in a small bowl.
- 20. Brush the dough with the egg yolk-water mixture.
- 21. Sprinkle the remaining sunflower seeds and pine nuts over the top.
- 22. Bake the bread in the oven for about 50 minutes until golden brown.
- 23. Perform the skewer test: Insert a wooden skewer into the center of the bread; if it comes out clean, the bread is done.
- 24. Take the bread out of the oven.
- 25. Let it cool for a short while.
- 26. Place it on a wire rack and let it cool completely.
- 27. Serve the bread with lime butter if desired.
