  1. 1. Peel the carrot and grate it finely.
  2. 2. Crumble the yeast into the lukewarm milk.
  3. 3. Stir in the sugar until the mixture is smooth.
  4. 4. Add the flour, salt, grated carrots, egg, pine nuts, and buttermilk to a large bowl.
  5. 5. Pour in the milk-yeast mixture.
  6. 6. Knead the dough with the mixer's dough hooks until it is smooth and no longer sticks to the sides of the bowl.
  7. 7. If the dough is too sticky, add a little more flour; if it is too dry, add a little more buttermilk.
  8. 8. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
  9. 9. Sprinkle some flour on your work surface.
  10. 10. Take the dough out and knead it vigorously.
  11. 11. Work about 50 grams of the sunflower seeds into the dough.
  12. 12. Divide the dough into two equal parts.
  13. 13. Shape each part into a long strand about 40 centimeters long.
  14. 14. Braid the two strands together.
  15. 15. Press the ends together firmly so the braid does not unravel.
  16. 16. Place the braided dough on a baking sheet lined with baking paper.
  17. 17. Let the dough rise again for about 15 minutes.
  18. 18. Preheat the oven to 180 degrees (turn off convection or use top/bottom heat).
  19. 19. Whisk the egg yolk with one tablespoon of water in a small bowl.
  20. 20. Brush the dough with the egg yolk-water mixture.
  21. 21. Sprinkle the remaining sunflower seeds and pine nuts over the top.
  22. 22. Bake the bread in the oven for about 50 minutes until golden brown.
  23. 23. Perform the skewer test: Insert a wooden skewer into the center of the bread; if it comes out clean, the bread is done.
  24. 24. Take the bread out of the oven.
  25. 25. Let it cool for a short while.
  26. 26. Place it on a wire rack and let it cool completely.
  27. 27. Serve the bread with lime butter if desired.
