🍽️ Creamy Sardine and Zucchini Dip

Ingredients
- 4 tbsp breadcrumbs
- 4 tbsp olive oil
- 1 zucchini
- 2 fresh garlic cloves
- 1 tbsp capers
- 40 g dried tomatoes (in oil)
- 1 onion
- 200 g oil sardines skinless and boneless (can)
- 1 tbsp fresh chopped parsley
- 2 tbsp lemon juice
- sea salt
- pepper (ground)
Instructions
- 1. Heat 2 tablespoons of oil in a frying pan.
- 2. Toast the breadcrumbs until golden brown.
- 3. Remove the breadcrumbs from the pan and place them in a large bowl.
- 4. Wash the zucchini and cut it into small cubes.
- 5. Peel the garlic and chop it finely.
- 6. Drain the capers and tomatoes well.
- 7. Chop the capers and tomatoes finely.
- 8. Peel the onion and dice it finely.
- 9. Drain the sardines.
- 10. Mash the sardines with a fork in the bowl.
- 11. Add the onion, capers, tomatoes, garlic, and zucchini to the sardines.
- 12. Add the remaining oil, parsley, and lemon juice.
- 13. Season everything with salt and pepper.
- 14. Mix all ingredients thoroughly with the breadcrumbs.
- 15. Place the bowl in the refrigerator for about 20 minutes.
- 16. Taste the dip again before serving and adjust seasoning if needed.
