  2. 2. Pat the sprigs completely dry with a kitchen towel.
  3. 3. Place the dry tarragon sprigs into a clean and thoroughly dry bottle or jar.
  4. 4. Pour the oil over the herbs until they are completely covered.
  5. 5. Seal the bottle tightly and place it in a cool spot.
  6. 6. Let the oil infuse for about two weeks to allow the flavor to develop.
  7. 7. Pour the finished oil through a fine mesh sieve into a clean bottle or carafe.
  8. 8. Add one or two fresh tarragon sprigs to the bottle if desired.
