🍰 Provence Garlic Cream

Ingredients
- 5 large garlic cloves
- 3 egg yolks
- 1 tsp medium-hot mustard
- salt
- white pepper (from the mill)
- 300 ml olive oil
- 3 sprigs parsley
- 0.5 tbsp lime juice
Instructions
- 1. Peel the garlic cloves.
- 2. Press the garlic through a press.
- 3. Add the egg yolks to a large bowl.
- 4. Add the mustard to the bowl.
- 5. Add a pinch of salt to the bowl.
- 6. Add a pinch of pepper to the bowl.
- 7. Whisk the ingredients in the bowl until the mixture is white and creamy.
- 8. Add the oil drop by drop to the egg-garlic mixture.
- 9. Whisk the oil in continuously while adding it.
- 10. Wait until the added oil is fully incorporated.
- 11. Add the next drop of oil.
- 12. Switch from drop-by-drop to a slow, steady stream of oil.
- 13. Wash the parsley under running water.
- 14. Shake the parsley dry.
- 15. Pluck the parsley leaves from the stems.
- 16. Finely chop the parsley leaves.
- 17. Fold the chopped parsley into the aioli.
- 18. Season the cream with salt.
- 19. Add lime juice and adjust the taste.
- 20. Fill the cream into small bowls.
- 21. Serve the bowls.
