  1. 1. Peel the onions and cut them in half.
  2. 2. Peel the carrots and celery and cut them into small cubes.
  3. 3. Place the onions with the cut side down in a large soup pot.
  4. 4. Fry the onions until they are brown.
  5. 5. Pour about 1.5 liters of cold water into the pot.
  6. 6. Add the oxtail to the water.
  7. 7. Slowly bring the mixture to a boil.
  8. 8. Add the cloves, bay leaves, peppercorns, and juniper berries.
  9. 9. Let the broth simmer gently over low heat for about 2 1/2 hours.
  10. 10. Place the pot lid halfway on.
  11. 11. Peel the carrots and celery and clean the onions.
  12. 12. Slice the carrots and celery.
  13. 13. Dice the onions.
  14. 14. Strain the finished soup through a fine sieve into a clean pot.
  15. 15. Carefully remove the meat from the bones.
  16. 16. Shred the meat into small pieces.
  17. 17. Bring the broth to a boil again.
  18. 18. Make sure about 1 liter of broth remains.
  19. 19. Add the cut vegetables and meat to the broth.
  20. 20. Let everything simmer gently for about 10 minutes.
  21. 21. Season the soup with sherry and salt.
  22. 22. Serve the broth hot.
