🍽️ Rich Beef Bone Broth

Ingredients
- 2 onions
- 2 carrots
- 200 g celeriac
- 1.5 kg oxtail (cut into pieces)
- 4 cloves
- 2 bay leaves
- 1 tsp peppercorns
- 0.5 tsp juniper berries
- 2 carrots
- 2 stalks celery stalks
- 1 onion
- Sherry

Instructions
- 1. Peel the onions and cut them in half.
- 2. Peel the carrots and celery and cut them into small cubes.
- 3. Place the onions with the cut side down in a large soup pot.
- 4. Fry the onions until they are brown.
- 5. Pour about 1.5 liters of cold water into the pot.
- 6. Add the oxtail to the water.
- 7. Slowly bring the mixture to a boil.
- 8. Add the cloves, bay leaves, peppercorns, and juniper berries.
- 9. Let the broth simmer gently over low heat for about 2 1/2 hours.
- 10. Place the pot lid halfway on.
- 11. Peel the carrots and celery and clean the onions.
- 12. Slice the carrots and celery.
- 13. Dice the onions.
- 14. Strain the finished soup through a fine sieve into a clean pot.
- 15. Carefully remove the meat from the bones.
- 16. Shred the meat into small pieces.
- 17. Bring the broth to a boil again.
- 18. Make sure about 1 liter of broth remains.
- 19. Add the cut vegetables and meat to the broth.
- 20. Let everything simmer gently for about 10 minutes.
- 21. Season the soup with sherry and salt.
- 22. Serve the broth hot.
