  1. 1. Peel the mango completely.
  2. 2. Carefully slice the soft flesh away from the large seed.
  3. 3. Cut the separated flesh into thin strips.
  4. 4. Cut the melon in half.
  5. 5. Remove the seeds from the melon.
  6. 6. Scoop small balls out of the melon flesh using a melon baller.
  7. 7. Place the mango strips and melon balls in a large bowl.
  8. 8. Whisk the rum and honey together well in a small bowl.
  9. 9. Wash the mint under running water.
  10. 10. Pat the mint dry with a kitchen towel.
  11. 11. Finely chop the mint leaves.
  12. 12. Pour the honey-rum mixture over the fruits in the bowl.
  13. 13. Add the chopped mint to the fruits.
  14. 14. Gently fold the ingredients together until everything is evenly coated.
  15. 15. Let the salad rest for a short while.
  16. 16. Portion the salad into small bowls or onto plates.
  17. 17. Sprinkle the finished dish with shredded coconut.
