🍰 Quick Fruit Cake with Quark Filling

Ingredients
- 150 g flour
- 10 g fresh yeast
- 4 tbsp sugar
- 6 tbsp lukewarm milk
- 2 egg yolks
- 1 tbsp soft butter
- 100 g low-fat quark
- 1 tsp grated lemon zest
- 2 tsp cornstarch
- 0.5 pear
- 0.5 apple
- 2 plums
- 50 g green grapes
- 30 g cranberries
- 1 tbsp pine nuts
Instructions
- 1. Put the flour into a large bowl.
- 2. Press a small well into the center of the flour with your finger.
- 3. Crumble the yeast directly into this well.
- 4. Add one teaspoon of sugar, some milk, and a spoonful of flour to the yeast.
- 5. Stir these ingredients together to form a small dough.
- 6. Cover the bowl.
- 7. Let the dough starter rise in a warm place for 15 minutes.
- 8. Add two tablespoons of sugar, one egg yolk, and the butter to the dough.
- 9. Knead everything well until a smooth dough forms.
- 10. Cover the dough again.
- 11. Let the dough rise for another 30 minutes.
- 12. Mix the second egg yolk with the quark.
- 13. Add the lemon zest, one tablespoon of sugar, and the starch to the quark mixture.
- 14. Wash the fruit thoroughly.
- 15. Remove any seeds or stems from the fruit.
- 16. Cut the fruit into small pieces.
- 17. Knead the dough briefly.
- 18. Lightly dust a work surface with flour.
- 19. Roll out the dough on the floured surface.
- 20. Grease a baking pan.
- 21. Line the greased pan with the dough.
- 22. Spread the quark mixture evenly over the dough.
- 23. Arrange the fruit pieces over the quark layer.
- 24. Preheat the oven to 200 degrees.
- 25. Place the pan on the middle rack.
- 26. Bake the cake for 10 minutes.
- 27. Sprinkle the cake with the remaining sugar.
- 28. Add the pine nuts on top.
- 29. Bake the cake for another 10 to 12 minutes.
