🍽️ Sweet and Savory Meat Skewers with Spinach

Ingredients
- 600 g spinach
- salt
- 1 clove of garlic
- 2 red onions
- 2 tbsp sesame oil
- 2 tbsp sesame seeds
- salt
- lemon juice
- 500 g pork tenderloin
- 2 apricots
- 1 red chili pepper
- 2 tbsp vegetable oil
- salt
- 1 tbsp honey
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems.
- 2. Blanch the spinach briefly in boiling salted water.
- 3. Remove the spinach from the water immediately and let it cool.
- 4. Squeeze the spinach well to remove excess liquid.
- 5. Peel the garlic clove and the onions.
- 6. Finely chop the garlic.
- 7. Halve the onions and slice them into thin strips.
- 8. Heat sesame oil in a pan.
- 9. Sauté the onion strips for 1 to 2 minutes.
- 10. Add the chopped garlic, sesame seeds, and the prepared spinach to the pan.
- 11. Let the mixture simmer for another 2 to 3 minutes.
- 12. Season the vegetables with salt and a splash of lemon juice.
- 13. Cut the meat into small, bite-sized pieces.
- 14. Halve the apricots and remove the pits.
- 15. Cut the apricot halves into wedges.
- 16. Thread the meat pieces and apricot wedges onto the wooden skewers, alternating between them.
- 17. Wash the chili pepper and remove the stem.
- 18. Finely chop the chili pepper.
- 19. Mix the chopped chili with the oil.
- 20. Brush the skewers with the chili-oil mixture.
- 21. Lightly salt the skewers.
- 22. Fry the skewers in a hot pan for about 2 minutes on each side.
- 23. Drizzle honey over the cooked skewers.
- 24. Let the honey caramelize briefly.
- 25. Place the prepared spinach mixture on the plate.
- 26. Place the meat skewers on top of the vegetables.
- 27. Garnish the dish with fresh herbs if desired.
