  2. 2. Blanch the spinach briefly in boiling salted water.
  3. 3. Remove the spinach from the water immediately and let it cool.
  4. 4. Squeeze the spinach well to remove excess liquid.
  5. 5. Peel the garlic clove and the onions.
  6. 6. Finely chop the garlic.
  7. 7. Halve the onions and slice them into thin strips.
  8. 8. Heat sesame oil in a pan.
  9. 9. Sauté the onion strips for 1 to 2 minutes.
  10. 10. Add the chopped garlic, sesame seeds, and the prepared spinach to the pan.
  11. 11. Let the mixture simmer for another 2 to 3 minutes.
  12. 12. Season the vegetables with salt and a splash of lemon juice.
  13. 13. Cut the meat into small, bite-sized pieces.
  14. 14. Halve the apricots and remove the pits.
  15. 15. Cut the apricot halves into wedges.
  16. 16. Thread the meat pieces and apricot wedges onto the wooden skewers, alternating between them.
  17. 17. Wash the chili pepper and remove the stem.
  18. 18. Finely chop the chili pepper.
  19. 19. Mix the chopped chili with the oil.
  20. 20. Brush the skewers with the chili-oil mixture.
  21. 21. Lightly salt the skewers.
  22. 22. Fry the skewers in a hot pan for about 2 minutes on each side.
  23. 23. Drizzle honey over the cooked skewers.
  24. 24. Let the honey caramelize briefly.
  25. 25. Place the prepared spinach mixture on the plate.
  26. 26. Place the meat skewers on top of the vegetables.
