  1. 1. Put the ground nuts into a hot pan.
  2. 2. Stir the nuts constantly until they are lightly fragrant.
  3. 3. Remove the nuts from the pan.
  4. 4. Let the nuts cool down completely.
  5. 5. Preheat the oven to 140 degrees Celsius fan mode.
  6. 6. Whip the egg whites together with the salt until stiff.
  7. 7. Add the vanilla sugar and the sugar.
  8. 8. Continue stirring until the sugar is incorporated.
  9. 9. Mix the cooled nuts with the gingerbread spice.
  10. 10. Fold the nut-spice mixture into the egg mixture.
  11. 11. Fill the mixture into a piping bag with a round tip.
  12. 12. Line one or two baking trays with baking paper.
  13. 13. Pipe 5 to 6 centimeter long, narrow strips onto the trays.
  14. 14. Leave some space between the strips.
  15. 15. Bake the sticks in the oven for 15 to 20 minutes.
  16. 16. Remove the sticks when they are lightly golden brown.
  17. 17. Let the sticks cool down on the tray.
  18. 18. Mix the powdered sugar with the lemon juice until thick.
  19. 19. Fill the icing mixture into a small piping bag.
  20. 20. Decorate the cooled sticks with the icing in fine lines.
  21. 21. Sprinkle the sticks with coarsely chopped hazelnut flakes.
  22. 22. Let the sticks dry well.
