🍽️ Crunchy Nut Sticks with Icing

Ingredients
- 125 g ground hazelnuts
- 125 g ground walnuts
- 3 egg whites
- 1 pinch salt
- 2 tbsp vanilla sugar
- 100 g sugar
- 1 tsp gingerbread spice
- 100 g powdered sugar
- 1 tsp lemon juice
- 40 g roasted hazelnut slices
Instructions
- 1. Put the ground nuts into a hot pan.
- 2. Stir the nuts constantly until they are lightly fragrant.
- 3. Remove the nuts from the pan.
- 4. Let the nuts cool down completely.
- 5. Preheat the oven to 140 degrees Celsius fan mode.
- 6. Whip the egg whites together with the salt until stiff.
- 7. Add the vanilla sugar and the sugar.
- 8. Continue stirring until the sugar is incorporated.
- 9. Mix the cooled nuts with the gingerbread spice.
- 10. Fold the nut-spice mixture into the egg mixture.
- 11. Fill the mixture into a piping bag with a round tip.
- 12. Line one or two baking trays with baking paper.
- 13. Pipe 5 to 6 centimeter long, narrow strips onto the trays.
- 14. Leave some space between the strips.
- 15. Bake the sticks in the oven for 15 to 20 minutes.
- 16. Remove the sticks when they are lightly golden brown.
- 17. Let the sticks cool down on the tray.
- 18. Mix the powdered sugar with the lemon juice until thick.
- 19. Fill the icing mixture into a small piping bag.
- 20. Decorate the cooled sticks with the icing in fine lines.
- 21. Sprinkle the sticks with coarsely chopped hazelnut flakes.
- 22. Let the sticks dry well.
