  1. 1. Whip the egg whites with a pinch of salt until stiff. Stir in the sugar and continue whipping until glossy. Gradually add the flour and mix gently. Finally, fold in the hazelnuts and the butter.
  2. 2. Fill the dough into a piping bag fitted with a plain tip. Pipe small dots with a diameter of 2 to 3 centimeters onto a baking sheet lined with parchment paper. Leave some space between the dots as the dough spreads slightly while baking.
  3. 3. Bake the cookies in the preheated oven at 180 degrees for about 12 minutes. Remove them and let them cool completely.
  4. 4. Chop the chocolate and melt it slowly. Brush the bottom of one cookie with the chocolate and place another cookie on top. Decorate the cookies with the remaining chocolate and, if desired, with small sugar pearls.
