🍰 Crunchy Walnut Cookies

Ingredients
- 150 g Sugar
- 70 g very soft Butter
- 50 g Flour
- 3 Egg whites
- 1 Pinch Salt
- 150 g Walnuts (ground)
- 200 g Couverture chocolate
- Walnut kernel halves (for decorating)
Instructions
- 1. Whisk the egg whites together with a pinch of salt until stiff.
- 2. Add the sugar and continue to beat the mixture until it is glossy and firm.
- 3. Stir the flour into the egg mixture gradually.
- 4. Add the ground walnuts and stir them in.
- 5. Stir the butter into the dough at the end.
- 6. Fill the dough into a piping bag fitted with a plain nozzle.
- 7. Line a baking tray with baking paper.
- 8. Pipe small dots of dough onto the tray.
- 9. Make sure the dots have some space between them, as the dough will spread while baking.
- 10. Preheat the oven to 180 degrees Celsius.
- 11. Bake the cookies for about 12 minutes.
- 12. Take the cookies out of the oven.
- 13. Let the cookies cool down completely.
- 14. Chop the chocolate coating into small pieces.
- 15. Melt the chocolate slowly.
- 16. Take half of the cooled cookies.
- 17. Brush the bottom of these cookies with the melted chocolate.
- 18. Place a second cookie on top to form a sandwich.
- 19. Brush the top of the finished cookies with chocolate as well.
- 20. Place half a walnut on the still wet chocolate.
