🍰 Crunchy Nut Cookies

Ingredients
- 150 g soft butter
- 125 g powdered sugar
- 1 tsp vanilla sugar
- 1 egg yolk
- 100 g peeled ground almond kernels
- 175 g flour
- powdered sugar (for dusting)
- baking paper (for the tray)
Instructions
- 1. Preheat the oven.
- 2. Beat the butter together with powdered sugar, vanilla sugar, and the egg yolk until creamy.
- 3. Gradually add the ground almonds.
- 4. Add the flour and continue stirring until you have a smooth dough.
- 5. Wrap the dough in plastic wrap.
- 6. Let the dough rest in the refrigerator for 30 minutes.
- 7. Line baking sheets with baking paper.
- 8. Form walnut-sized balls from the dough.
- 9. Place the dough balls on the prepared sheet.
- 10. Bake the cookies in the preheated oven at 150 degrees on the middle rack.
- 11. Bake the cookies for about 35 minutes until they are light yellow.
- 12. Pull the baking paper with the finished cookies off the sheet.
- 13. Let the cookies cool on the paper.
- 14. Finally, dust the cooled cookies with powdered sugar.
