🍰 Moist Nut Cake with Dried Fruits

Ingredients
- 350 g Dates
- 250 g Dried plums
- 120 g Butter
- 150 g brown sugar
- 2 Eggs
- 1 untreated Lemon (zested peel)
- 0.25 tsp Salt
- 350 g Flour
- 2 tsp Baking powder
- 150 g chopped walnut kernels
- 1 tbsp Honey
- Butter (for the pan)
- Breadcrumbs (for the pan)
Instructions
- 1. Remove the pits from the dates and plums (keep 5 dates aside). Roughly chop the fruit flesh into pieces.
- 2. Grease a springform pan with butter and dust it with breadcrumbs.
- 3. Preheat the oven to 190 degrees Celsius fan mode.
- 4. Place the chopped dates and plums along with the butter into a large bowl.
- 5. Pour 350 milliliters of boiling water over the mixture.
- 6. Stir until the butter has completely melted.
- 7. Allow the fruit mixture to cool down.
- 8. In a second bowl, whisk the sugar with the eggs, lemon zest, and salt until the mixture is frothy.
- 9. Sift the flour and baking powder over the egg mixture.
- 10. Add the walnut kernels and mix everything well.
- 11. Combine the batter with the cooled date and plum mixture.
- 12. Pour the batter evenly into the prepared springform pan.
- 13. Smooth the surface of the batter.
- 14. Bake the cake in the preheated oven for approx. 1 hour and 15 minutes.
- 15. Cover the cake with aluminum foil if necessary to prevent it from browning too much.
- 16. Perform the skewer test to check if the cake is done.
- 17. Allow the cake to cool completely in the pan overnight.
- 18. Place the 5 remaining dates in the center of the cake.
- 19. Drizzle the dates with honey.
