🍽️ Creamy Walnut Soup

Ingredients
- 2 onions
- 200 g walnut kernels
- 4 tbsp butter
- 3 tbsp flour
- 750 ml vegetable broth
- 150 ml whipping cream
- salt
- pepper (from the mill)
- lemon juice
- walnut kernel halves (for garnishing)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Finely chop the walnuts.
- 3. Melt the butter in a pot.
- 4. Sauté the onion cubes until translucent.
- 5. Dust the mixture with flour.
- 6. Stir the roux (a light sauce made of butter and flour) until smooth.
- 7. Add the chopped walnuts.
- 8. Sauté the nuts briefly.
- 9. Deglaze the mixture with the broth.
- 10. Let the soup simmer on low heat for about 15 minutes.
- 11. Stir in the cream.
- 12. Puree the soup until smooth.
- 13. Adjust the consistency with more broth or by simmering slightly.
- 14. Season the soup with salt, pepper, and lemon juice.
- 15. Whip the soup until frothy again.
- 16. Divide the soup among the bowls.
- 17. Garnish the plates with a few walnut halves.
