  1. 1. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
  2. 2. Knead butter, sugar, egg yolks, vanilla sugar, flour, and a pinch of salt into a smooth shortcrust pastry dough.
  3. 3. Divide the dough into two equal pieces.
  4. 4. Place the dough pieces in the freezer compartment to store them for up to 5 days or 1 month.
  5. 5. Let the dough thaw in the refrigerator one day before use.
  6. 6. Line small round baking molds with a diameter of 5 cm with the dough.
  7. 7. Roast almonds, hazelnuts, and walnuts in a pan without added fat.
  8. 8. Heat honey and sugar in a separate pan while stirring until the mixture becomes liquid.
  9. 9. Mix the cream with the roasted nuts and stir everything well.
  10. 10. Remove the pan from the heat, as the mixture hardens quickly as it cools.
  11. 11. Immediately place one tablespoon of the nut mixture into each prepared tartlet.
  12. 12. Bake the tartlets in the hot oven for 15 minutes until golden yellow.
