🍰 Crunchy Nut Tartlets

Ingredients
- 125 g Butter
- 125 g Sugar
- 2 Egg yolks
- 1 packet Vanilla sugar
- 175 g Flour
- 1 Pinch Salt
- 100 g Almond kernels
- 50 g Hazelnuts
- 100 g Walnuts
- 4 tbsp Honey
- 2 tbsp Whipping cream
- 4 tbsp Sugar
Instructions
- 1. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
- 2. Knead butter, sugar, egg yolks, vanilla sugar, flour, and a pinch of salt into a smooth shortcrust pastry dough.
- 3. Divide the dough into two equal pieces.
- 4. Place the dough pieces in the freezer compartment to store them for up to 5 days or 1 month.
- 5. Let the dough thaw in the refrigerator one day before use.
- 6. Line small round baking molds with a diameter of 5 cm with the dough.
- 7. Roast almonds, hazelnuts, and walnuts in a pan without added fat.
- 8. Heat honey and sugar in a separate pan while stirring until the mixture becomes liquid.
- 9. Mix the cream with the roasted nuts and stir everything well.
- 10. Remove the pan from the heat, as the mixture hardens quickly as it cools.
- 11. Immediately place one tablespoon of the nut mixture into each prepared tartlet.
- 12. Bake the tartlets in the hot oven for 15 minutes until golden yellow.
