  1. 1. Mix the milk with one tablespoon of sugar and the yeast until smooth.
  2. 2. Put flour, butter, remaining sugar, and the egg yolk in a bowl.
  3. 3. Pour in the yeast milk, and knead everything with the beaters of an electric hand mixer into a smooth dough.
  4. 4. Cover and let rise in a warm place for about 45 minutes.
  5. 5. Peel the apples, quarter them, remove the core.
  6. 6. Chop them into small pieces.
  7. 7. Heat three tablespoons of water and stew the apples in it over medium heat for 3 to 4 minutes.
  8. 8. Sweeten with two tablespoons of sugar and let cool.
  9. 9. Knead the dough briefly on a lightly floured surface.
  10. 10. Roll it out into a rectangle about 20 by 30 centimeters.
  11. 11. Mix one tablespoon of sugar with cinnamon and nuts.
  12. 12. Sprinkle the dough with this mixture.
  13. 13. Spread the cooled apples on top.
  14. 14. Roll the dough up from the long side.
  15. 15. Cut it into six slices.
  16. 16. Place the rolls on a baking sheet lined with baking paper.
  17. 17. Let them rise covered for another 20 minutes.
  18. 18. Melt the remaining butter.
  19. 19. Brush the rolls with the melted butter.
  20. 20. Bake them in the preheated oven at 200 degrees (center) for about 25 minutes.
