🍽️ Creamy Wild Rice with Nuts and Citrus Notes

Ingredients
- 60 g wild rice
- 2 tbsp butter
- 1 small onion
- 250 g long-grain rice
- 500 ml vegetable broth
- 2 tbsp raisins
- 50 g pine nuts
- 0.5 bunch basil
- 0.5 orange (unwaxed)
- salt (to taste)
Instructions
- 1. Cook the wild rice according to the instructions on the package.
- 2. Set the cooked rice aside.
- 3. Melt the butter in a pot.
- 4. Peel the onion and cut it into fine cubes.
- 5. Sauté the onion cubes in the melted butter.
- 6. Add the wild rice to the pot and sauté it briefly.
- 7. Stir until the rice smells pleasantly nutty.
- 8. Pour in vegetable broth until the mixture has the consistency of a liquid porridge.
- 9. Bring the rice to a boil.
- 10. Reduce the heat and let the rice simmer until tender.
- 11. The cooking time is about 15 to 30 minutes, depending on the variety.
- 12. Stir in a little more broth occasionally if the mixture becomes too thick.
- 13. Add the raisins after about 10 minutes of cooking time.
- 14. Toast the pine nuts in a pan without additional fat until golden brown.
- 15. Set the toasted pine nuts aside.
- 16. Cut the basil leaves into fine strips.
- 17. Add the basil, the grated orange peel, the pine nuts, and the prepared wild rice to the pot shortly before the end of the cooking time.
- 18. Mix all ingredients thoroughly.
- 19. Season the dish to taste.
