🍽️ Crunchy Nut and Jam Cookies

Ingredients
- 125 g soft butter
- 1 egg
- 50 g sugar
- 40 g ground walnuts
- 200 g whole wheat flour
- 0.5 tsp baking powder
- cinnamon powder (1 pinch each)
- ground cloves (1 pinch each)
- 75 g red currant jam
- 100 g powdered sugar
- 2 tbsp lemon juice
- 30 walnut half pieces
Instructions
- 1. Beat the soft butter with an electric hand mixer until fluffy.
- 2. Add the egg, sugar, ground nuts, flour, baking powder, and spices.
- 3. Mix everything into a firm dough.
- 4. Knead the dough briefly by hand.
- 5. Shape the dough into a ball.
- 6. Wrap the dough ball in cling film.
- 7. Let the dough rest in the refrigerator for 1 hour.
- 8. Preheat the oven to 180 degrees Celsius.
- 9. Dust the work surface with flour.
- 10. Roll out the dough to a thickness of 3 to 4 millimeters.
- 11. Cut out rectangular cookies with a fluted edge.
- 12. Line a baking tray with baking paper.
- 13. Place the cookies on the tray.
- 14. Bake the cookies for about 12 minutes.
- 15. Remove the baked cookies from the tray.
- 16. Spread jam on one cookie.
- 17. Press a second cookie on top.
- 18. Let the cookies cool on a wire rack.
- 19. Mix powdered sugar with lemon juice until smooth.
- 20. Brush the cooled cookies with the glaze.
- 21. Place a walnut half on each cookie immediately.
- 22. Allow the glaze to dry.
- 23. Use ground almonds instead of walnuts for round double-decker cookies.
- 24. Decorate the glaze on round cookies with sliced almonds.
