🍰 Crunchy Nut Bars

Ingredients
- 100 g soft butter
- 40 g sugar
- 1 packet vanilla sugar
- 1 egg (size M)
- 200 g flour
- 150 g peeled almond kernels
- 250 g walnuts
- 50 g pistachios
- 80 g honey
- 50 g butter
- 100 g raw sugar
- 100 ml whipping cream
Instructions
- 1. Beat the butter, sugar, vanilla sugar, and egg in a bowl with a mixer or whisk until the mixture is creamy and airy.
- 2. Stir in half of the flour amount into the butter mixture.
- 3. Knead the remaining part of the flour into the dough with your hands until it comes together.
- 4. Wrap the dough tightly in plastic wrap.
- 5. Place the dough in the refrigerator for about one hour to firm up.
- 6. Preheat the oven to 200 degrees Celsius top and bottom heat (or 180 degrees Celsius fan-forced).
- 7. Place a roll of baking paper on the work surface.
- 8. Shape the dough into a rectangle measuring about 28 by 24 centimeters.
- 9. Place a baking frame around the dough to keep its shape.
- 10. Prick the surface of the dough several times with a fork to prevent it from rising while baking.
- 11. Carefully lift the baking paper with the dough onto a baking sheet.
- 12. Bake the dough base in the preheated oven for 18 to 20 minutes until golden brown.
- 13. Roughly chop the almonds, walnuts, and pistachios.
- 14. Add the honey, butter, sugar, cream, and chopped nuts to a saucepan.
- 15. Cook the nut mixture, stirring constantly, for about 3 minutes.
- 16. Take the pre-baked dough base out of the oven.
- 17. Spread the hot nut mixture evenly over the dough.
- 18. Smooth the nut mixture with a spoon or spatula.
- 19. Place the bars back in the oven and bake at the same temperature for another 15 to 18 minutes.
- 20. Let the bars cool completely.
- 21. Cut the cooled bars into small squares.
