🍰 Moist Nut and Fruit Loaf

Ingredients
- 1 Lemon
- 300 g Apples
- 100 g dried Apricots
- 125 g Raisins
- 140 g peeled Almond kernels
- 100 g Hazelnuts
- 2 tbsp Honey
- 1 tsp Cinnamon
- 1 pinch Clove powder
- 20 ml Orange juice
- 250 g Wheat flour
- 250 g Whole wheat flour
- 1 packet Baking powder
- 1 pinch Salt
- 1 Egg
- 2 tbsp Condensed milk
- 6 Maraschino cherries
Instructions
- 1. Squeeze the juice from the half lemon into a small bowl.
- 2. Peel the apples and cut them into quarters.
- 3. Remove the core from the apple quarters.
- 4. Grate the apple pieces coarsely.
- 5. Mix the grated apples immediately with the lemon juice to prevent browning.
- 6. Cut the apricots into coarse cubes.
- 7. Set aside a small handful of almonds for later decoration.
- 8. In a large bowl, mix the apples with the raisins, the remaining almonds, the hazelnuts, the apricots, the honey, the spices, and the orange juice.
- 9. Let the fruit mixture soak overnight.
- 10. In a separate bowl, mix the flours, the baking powder, and the salt.
- 11. Knead the flour mixture and the egg into the overnight fruit mass until a dough forms.
- 12. Line a loaf pan with baking paper.
- 13. Fill the dough into the prepared pan.
- 14. Smooth the surface of the dough.
- 15. Brush the surface of the dough with condensed milk.
- 16. Decorate the surface with the candied cherries and the remaining almonds.
- 17. Preheat the oven.
- 18. Bake the loaf at 175 degrees Celsius (convection 150 degrees Celsius or gas mark 2) for about one hour.
- 19. Remove the bread from the oven.
- 20. Let the bread cool slightly in the pan.
- 21. Turn the bread out of the pan.
- 22. Let the bread cool completely.
