🍽️ Oven Red Cabbage with Walnuts

Ingredients
- 1.5 kg Red Cabbage (1 Red Cabbage)
- 1 tbsp Olive Oil
- 40 g Walnut Kernels
- 2 Bay Leaves
- 1 Cinnamon Stick
- 4 Shallots
- 400 ml Vegetable Broth
- 2 tbsp Balsamic Vinegar
- 40 g Cranberries (Jar; 2 tbsp; Unsweetened)
- Salt
- Pepper
Instructions
- 1. Wash the red cabbage thoroughly and remove the hard core end.
- 2. Cut the cabbage into large wedges.
- 3. Brush a deep baking tray with oil.
- 4. Place the red cabbage wedges on the prepared tray.
- 5. Sprinkle walnuts evenly over the cabbage.
- 6. Distribute bay leaves and cinnamon sticks over the vegetables.
- 7. Peel the shallots and slice them into thin rings.
- 8. Place the shallot rings on top of the red cabbage.
- 9. Mix the broth with the vinegar and cranberries in a bowl.
- 10. Pour the liquid evenly over the cabbage.
- 11. Season the dish with salt and black pepper to taste.
- 12. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 13. Place the tray in the oven and bake the cabbage for about 40 minutes.
- 14. Take the tray out occasionally and pour some of the broth over the cabbage again and again.
