🍰 Nuremberg Lebkuchen

Ingredients
- 175 g liquid honey
- 2 eggs
- 175 g cane sugar
- 1 lemon (juice and grated zest)
- 400 g flour
- 1 packet baking powder
- 1 tsp cinnamon
- 0.5 tsp ground cloves
- 1 tsp coriander (ground)
- powdered sugar (for the tray)
- wafer (8 cm ⌀)
- almond kernels (halved, peeled)
- red glazed cherry (halved)
- 4 tbsp powdered sugar
- 2 tbsp lukewarm water
Instructions
- 1. Beat the eggs with the sugar in a bowl until the mixture is frothy and airy.
- 2. Add the lemon zest and lemon juice and continue stirring until the mixture thickens slightly.
- 3. Stir the honey into the egg mixture until it is well combined.
- 4. Mix the flour with the baking powder and spices in a separate container.
- 5. Gently fold the flour mixture into the honey-egg mixture until a uniform dough forms.
- 6. Let the dough rest for a short moment.
- 7. Take a warm knife and spread the dough thinly onto round wafer cookies.
- 8. Place the topped wafers onto a baking sheet.
- 9. Lightly dust the lebkuchen with powdered sugar.
- 10. Let the lebkuchen rest overnight in a cool and dry place.
- 11. Decorate the lebkuchen the next day with half almonds and glazed cherries.
- 12. Preheat the oven to 150 degrees.
- 13. Bake the lebkuchen for about 25 minutes in the preheated oven.
- 14. Mix powdered sugar with a little water until a slightly milky but still transparent glaze forms.
- 15. Glaze the lebkuchen while still hot with the prepared sugar mixture.
