  1. 1. Pour the flour onto a clean work surface.
  2. 2. Press a well into the center of the flour with your hand.
  3. 3. Crack the eggs directly into this well.
  4. 4. Add the salt and the oil.
  5. 5. Knead everything vigorously into a smooth dough.
  6. 6. If the dough seems too dry, knead in a little water bit by bit.
  7. 7. Wrap the finished dough tightly in cling film.
  8. 8. Let the dough rest for at least 30 minutes.
  9. 9. After resting, divide the dough into two or three equal pieces.
  10. 10. Wrap the pieces you do not need immediately in cling film again.
  11. 11. Lightly dust the work surface with flour.
  12. 12. Take one piece of dough and roll it flat with a rolling pin.
  13. 13. Turn on your pasta machine.
  14. 14. Pull the dough through the machine until it reaches the desired thickness.
