  1. 1. Cut the green onions into small pieces.
  2. 2. Cut the Chinese cabbage into small pieces and place it in a bowl.
  3. 3. Sprinkle the Chinese cabbage with salt and let it stand for about 30 minutes to draw out the water.
  4. 4. Place the Chinese cabbage on a kitchen towel and squeeze it well to remove excess moisture.
  5. 5. Peel the ginger and dice it very finely.
  6. 6. Add the green onions, the meat, the ginger, and the Chinese cabbage to a bowl.
  7. 7. Season the mixture with pepper, soy sauce, and a little sesame oil.
  8. 8. Mix all the filling ingredients well together.
  9. 9. Mix the flour with a pinch of salt and a little water.
  10. 10. Knead the dough until it is elastic and smooth.
  11. 11. Add more water gradually until the dough no longer sticks to your hands.
  12. 12. Let the dough rest for about half an hour.
  13. 13. Peel the ginger for the dip and chop it finely.
  14. 14. Mix the chopped ginger with soy sauce and vinegar.
  15. 15. Add roasted sesame seeds to the dip preparation.
  16. 16. Roll out the dough with a rolling pin into round sheets with a diameter of about 8 cm.
  17. 17. Make sure the edges are thinner than the center.
  18. 18. Keep one side of the dough sheet free of flour so it can be sealed well later.
  19. 19. Place the prepared filling in the center of the dough sheet.
  20. 20. Fold the dough sheet together and press the edges firmly.
  21. 21. Cook the noodle dumplings in simmering water for 7 minutes.
  22. 22. Remove the noodle dumplings and let them drain.
  23. 23. Fry the noodle dumplings briefly in hot oil until they are golden yellow.
  24. 24. Let the excess fat drain off.
  25. 25. Serve the noodle dumplings with the prepared dip.
