🍝 Chinese-style Noodle Dumplings

Ingredients
- 1 bunch spring onions
- 1 small Napa cabbage
- salt
- 3 cm ginger
- pepper
- light soy sauce
- sesame oil
- water
- 200 g flour
- salt
- 2 cm ginger
- soy sauce
- balsamic vinegar
- roasted sesame seeds
- vegetable oil (for frying)
Instructions
- 1. Cut the green onions into small pieces.
- 2. Cut the Chinese cabbage into small pieces and place it in a bowl.
- 3. Sprinkle the Chinese cabbage with salt and let it stand for about 30 minutes to draw out the water.
- 4. Place the Chinese cabbage on a kitchen towel and squeeze it well to remove excess moisture.
- 5. Peel the ginger and dice it very finely.
- 6. Add the green onions, the meat, the ginger, and the Chinese cabbage to a bowl.
- 7. Season the mixture with pepper, soy sauce, and a little sesame oil.
- 8. Mix all the filling ingredients well together.
- 9. Mix the flour with a pinch of salt and a little water.
- 10. Knead the dough until it is elastic and smooth.
- 11. Add more water gradually until the dough no longer sticks to your hands.
- 12. Let the dough rest for about half an hour.
- 13. Peel the ginger for the dip and chop it finely.
- 14. Mix the chopped ginger with soy sauce and vinegar.
- 15. Add roasted sesame seeds to the dip preparation.
- 16. Roll out the dough with a rolling pin into round sheets with a diameter of about 8 cm.
- 17. Make sure the edges are thinner than the center.
- 18. Keep one side of the dough sheet free of flour so it can be sealed well later.
- 19. Place the prepared filling in the center of the dough sheet.
- 20. Fold the dough sheet together and press the edges firmly.
- 21. Cook the noodle dumplings in simmering water for 7 minutes.
- 22. Remove the noodle dumplings and let them drain.
- 23. Fry the noodle dumplings briefly in hot oil until they are golden yellow.
- 24. Let the excess fat drain off.
- 25. Serve the noodle dumplings with the prepared dip.
